About Choice beef chuck roll

USDA Choice is the middle of the three grades a foodservice buyer normally sees, above Select and below Prime, and it is assigned on marbling in the ribeye. Because grading happens on the carcass, it applies to every cut taken off that animal, which is why a Choice chuck tender and a Choice short loin share a grade and nothing else.
