About Shallot

Onions divide into storage bulbs and fresh alliums, and they are not one market. Yellow, Spanish and white onions are a stored crop, shipped out of Oregon and Washington and backed by Peru and Mexico as domestic storage runs down, with New York State growing them in Orange County and the western part of the state. Vidalia is a sweet onion with a defined shipping window out of Georgia rather than a year-round item, and it does not substitute for a storage onion. Green onions, pearl onions and shallots follow their own supply and share nothing with the bulbs except a category name.

Buying notes

Storage onions are bought in fifty pound sacks, red in twenty-five and Vidalia in forty, while scallions are quoted by the forty-eight count crate, pearl onions as a case of eight-ounce cups and shallots in ten pound mesh.
