About Shallot
Onions divide into storage bulbs and fresh alliums, and they are not one market. Yellow, Spanish and white onions are a stored crop, shipped out of Oregon and Washington and backed by Peru and Mexico as domestic storage runs down, with New York State growing them in Orange County and the western part of the state. Vidalia is a sweet onion with a defined shipping window out of Georgia rather than a year-round item, and it does not substitute for a storage onion.
