About Tuscan kale

Despite the name, this is the brassica group as the New York trade actually buys it: green, red, savoy and napa cabbage, but also broccoli, broccoli crowns and rabe, broccolini, cauliflower, Brussels sprouts, kale and kohlrabi. The group is offered year-round, with California and Mexico as the base supply and New York State, Quebec, Ontario, New Jersey, Maine and the Southeast cutting in when their fields are running.
