What is in the case
The supplier states no weight for the 2CT pack, so we quote it as a pack and publish no price per pound for it. That is a limit of the source, and the reason our figure stays comparable from one week to the next: a per-pound price built on an assumed case weight moves whenever the assumption does.

About Tuscan kale
Despite the name, this is the brassica group as the New York trade actually buys it: green, red, savoy and napa cabbage, but also broccoli, broccoli crowns and rabe, broccolini, cauliflower, Brussels sprouts, kale and kohlrabi. The group is offered year-round, with California and Mexico as the base supply and New York State, Quebec, Ontario, New Jersey, Maine and the Southeast cutting in when their fields are running. These are hand-cut, cooled crops, so a heat event or a labor problem in the shipping district shows up in the quote quickly rather than gradually.
Buying notes
Heads are ordered by count or by a size code, broccoli by the bunch or as crowns by weight, and florets by the bag, so a cabbage quote and a broccoli quote are not the same unit even on the same order. Most lines here also exist as a half case or a two-count, and we list every pack we see quoted rather than reducing them to a single figure.
