About Green Thai peppers

This heading runs from colored bell peppers grown under glass to field-run green bell, and then into a long tail of chiles: jalapeno, serrano, poblano, habanero, Scotch bonnet, Thai and Holland hot. The two halves are supplied differently. Colored bells come from protected culture in the Netherlands, Ontario, Israel and Spain, while green bell and most of the chiles follow the North American field rotation our reference records, from Florida and Mexico in the cold months to Georgia, the Carolinas, Ohio, Michigan and New Jersey later on. For much of the year a single origin covers a given chile, so weather in one district can move that line on its own.

Green bell is quoted by the bushel and jalapeno by the full bushel, while colored bells and the hot chiles run in ten and eleven pound cases, boxes and one-pound lots, so the pack usually explains more of the gap between two quotes than the pepper does.
