The tomato line splits between greenhouse and field. Vine, cocktail, cherry and grape tomatoes come out of Mexican and Canadian glass essentially every week of the year, while round field tomatoes, plums and beefsteak follow Florida through the cold months, California in summer, and the East Coast fields of New Jersey, Virginia, Georgia and the Carolinas in their short window. Heirlooms are a grower-specific line rather than a commodity. Round tomatoes are sold on a size code and a green line is quoted alongside the ripe one, so two cases carrying the same product name can be very different goods.

Buying notes

Rounds and plums move in twenty-five pound cases carrying a size code, beefsteak and vine tomatoes in ten to fifteen pound flats, and cherry and grape as twelve-count flats of clamshells, so the flat and the case, not the pound, are what get invoiced. Cherry and grape lines are also carried down to a six-count, a two-count and a single clamshell.
